Halloween Vanilla Cookies

- 185g (6.5oz) butter
- 1 cup caster sugar
- 2 tsp vanilla extract
- 2 ½ cups plain flour
- 1 egg
- Cream the butter, sugar and vanilla until light and fluffy. Add the egg and beat again, then lastly add the flour and mix until just combined. Bring the dough together, wrap in clingfilm and refrigerate for half an hour.
- Preheat the oven to 180ºC (360°F) and line a baking tray with baking paper. Roll out the dough on a lightly floured surface until it is approximately 5mm (0.2 inch) thick. Cut shapes out from the dough, place them on the baking tray and bake for 10-13 minutes or until they just start to colour a light golden.
- Once cool decorate as desired.
